Windows wont close

So I have all these windows that I do not know how to close, How would I turn these off and how would I get the regular Hud?

If they appear automatically when the HUD appears then you have probably accidentally changed one of the popup groups to be 'show on table for everyone' instead of 'popup use only'.

Check out the Tutorial: Managing HUD Groups for information on how to change it back, and re-link the popup to the on-table group.

Alternatively, if you haven't made many changes to the Hud, you could reset the profile to the defaults.
