HUD 'click around'.

Not pop ups but a group that swaps to another (or different content) when you click on it.

Usage scenario
When you start the hand you have your general/preflop stats. At the flop you click the panel once and the flop stats are there. Turn, click again... River, etc. then click again to cycle back to preflop if you've misclicked. Ideally the cycle would reset to preflop each new hand. Super ideally of course the group would update for each street automagically.

Mild dyslexia means I struggle with the popup panels and want focused info not extra. Forgive me if this is already doable with the current feature set...

That feature doesn't exist. The closest you could do is add individual (and smaller) popups on individual stats -- so you could put a small popup of just a few stats on each stat you have on the table, then just remember where to click for what info.

Definitely want to request it then, for it's simplicity. Should also be useful for guided learning/new players: habit forming for stat checking and thinking on the appropriate info.

Thanks for the tip, I'll try and implement a work around but I can already feel a non optimal sense of complexity.
